Popular flour maker King Arthur Baking Company recently began selling a "climate blend" of whole wheat flour. It just might be a blueprint for launching a more sustainable version of an existing product. According to an article by Bloomberg, a research lab at Washington State University called Breadlab developed the flour. The November launch brings the Vermont flour maker a step closer to meeting its goal of sourcing all of its flour from regeneratively-grown wheat by 2030.

Regenerative techniques include limited soil tilling, crop rotation, and reduced use of fertilizers. No matter what your sustainability goals are, they need to start with a plan.

King Arthur Baking has been working with Breadlab since 2009, Bloomberg reports. The certified B-Corp business committed to its sustainability goal in 2022, it says. Climate Blend is just the beginning, and the company isn't pushing to change to the point of breaking. Instead, it has been moving slowly and steadily, using just one of its about 30 milling partners to create the Climate Blend.

"We've got to be willing to say that we'll step into that arena and share some of that risk by having to pay a little more until it becomes more mass practiced across the country," Janis Abbingsole, King Arthur chief operating officer, told Bloomberg,

At $5.95 per 2-pound bag, the business is asking customers to spend a little extra for the Climate Blend, according to the article. At more than double the price per ounce of its regular whole wheat, King Arthur hopes that early adopters will pay a premium, which will boost regenerative agriculture and drive down future costs. It seems to be paying off. According to Bloomberg, Climate Blend was King Arthur's top-selling whole wheat flour last month.
